first of all we always buy vacation insurance for this exact reason. So if there is a turn for the worse you can cancel and not be out the money. That way you can plan like all is fine and not worry about the financial part if the last minute she takes a turn for the worse. This is financial peace of mind.
Now for the personal. How will YOU feel if something happens while you are gone? Something can happen to anyone's family while they are gone but in your case the odds are higher due to her condition. If you and Her are on good terms and at peace with each other, then go. If you feel you would have regret for the rest of your life thinking what if...then don't go.
It's all about what you can live with should the worse case scenario happen. That said, I have had friends be on vacation when a close family member passes suddenly. This could happen anytime.
This is all about you at this point. How will YOU feel.
