What did you stuff them with?

I'm only asking because I have a recipe that is so good it'll make you cry.

Go to the fresh seafood section of your market, ask for a tube/package of crab stuffing (it comes in a chub like sausage and ground beef). Also get a pound of large to extra large uncooked shrimp. The stuffing will be frozen, leave it out to thaw. In the meantime, if your shrimp are frozen, thaw them. If not go right to the next step and devein, peel and butterfly them. There's a little plastic tool that does it perfectly every time. Spray a jellyroll pan (or pan with low sides) with an olive or cannola oil cooking spray. Put all your shrimps on the pan, spread out the bottoms (when you butterfly them cut almost all the way through) and put about 1/2 tablespoon of stuffing on each. Sort of mash the stuffing down with a fork or spoon. Bake in a 350 oven for 12-15 minutes. Immediately turn on the broiler and broil about a minute until the stuffing gets crispy and browned on top. You can use this same stuffing to stuff large mushroom caps and cook them the same way. :)
