They're not really charitable orgs though, they're educational institutions.

They may not have a profit motive, and they may do things that are charitable such as student aid but they don't really have a charitable purpose.
Plus I'd expect that the students that benefit most from the absence of an endowment tax are all from middle-to-high income families.
