They had no reason to guide earlier than 2020 before they opened reservations. 2020 was an expectation based on presumed demand. When they saw

actual demand they moved up their timeline.
There was nothing preventing them from having the Gigafactory ready to support 500,000 units of production before 2020 because projected demand said they wouldn't need it until then. Then the public said "we'd like a half million cars a LOT sooner" and so they moved into high gear to accelerate the build out of the Gigafactory and the improvements necessary at Fremont.
I'm not sure why you think they were incapable of changing that 2020 date when it was a date they set to begin with. It wasn't some hard fast date imposed from outside.
And absolutely, demand SHOULD impact production numbers and timeline. Which is exactly what's happening.
