Sounds yummy! Celery is one of the ingredients I cut from the stuffing recipe I make

Because A) don't really like it much and B) I'm already chopping stuff forever anyway, so one less thing

My parents used green bell pepper. I cut that because I think it's too strong and it tends to repeat on me. (burpsies!) -- nm

Yeah, I can't see green bell in that, unless maybe it's very finely diced? But celery seems to fit the recipe better -- nm

they used all 3 - onion, pepper and celery. all finely diced. -- nm

Admittedly, the stuffing I make (not a family recipe, amanda turned me onto it) is not in any way traditional
