brown first, finish in the oven....for big things like turkeys, rib roast, slowwww bake in the oven, when just about done, remove, turn up oven to 500

when it gets up to temp the roast has rested some, return the semi cooled roast to sear for 10m to crisp up the skin but won't penetrate too far into it. you get nice red juicy roast instead of the target with grey outer ring and pink eye.
