It almost certainly had more than one bathroom but sometimes they all stop working due to an underlying issue impacting them all.

Airline actually just buy an empty metal tube from airplane manufactures. They then pay someone to outfit the interior to the airline's spec (sometimes that can be the airplane manufacturer they pay for this, but other companies offer the service too). Airlines decide how inside is laid out and what amenities the plan has (within regulations, of course) regardless of they pay to outfit it.

This plane was a Norwegian 737-800. It has 186 seats and I can't tell if that is two bathrooms (one front one back) or four bathrooms (two front two back). Two total bathrooms would indeed be low for this plane and layout.
