On the subject of great meat, last night I cooked up half of the strip steak that I bought over the weekend. Filled the apartment with smoke...

and totally worth it.

everything i read said incredibly hot (ideally directly on hot coals), so i cranked up the heat on a griddle pan until smoke point on oil, then threw the pieces on. tons of smoke (which i was told would happen), 90 seconds per side, into foil for 15 minutes. i then took the baby bella mushrooms i'd been marinating in soy/mirin for a few days out, sliced them in with some green onion, tons of fresh garlic, salt/pepper, cooked with some butter. once the steak was ready to slice, dumped all the juices into the mushroom mixture, dumped that over the steak slices.

i don't think i've had a meal that good in AGES. holy crap. so tender.. just the right crisp on the outside, rare inside.
