Explain to me why they fire off from sea level, all those boosters are just to get the payload to the upper atmosphere....

why not balloon it up to the upper air, release and fire off with a lot smaller rocket...and/or larger payload?
one of the rocket 'tours' used a larger jet to raise the small capsule to high altitude.
