year. this will save you the week long brining process.

Corned beef comes 2 ways. A point cut and a flat cut. The flat cut is 1 piece of meat. The POINT cut is 2 layers of meat with fat in between them. this is the preferred pastrami cut. Point cuts are not always symmetric, so try to find one that is.
