A big star wouldn't have agreed to all that his character had to do. The bloody face in the bar in the beginning, and the generally having a cut, bloody face throughout the whole movie. The hilarious sick scenes where Bones got Kirk onto the Enterprise. The chubby hands. And Chris Pine just had to do a lot of physical acting and action. I don't think the big stars would throw themselves into the role the way Pine did.
