more important info for those who wish to age steaks. the meat is delivered to the grocers in a 20+ pound sealed plastic bag. being hermetically sealed

these bags are also wet aging the meat. most meat put out for sale at the grocery stores is already a week wet aged before you buy it. The steaks can have up to 2 weeks of wet aging between the slaughter house that breaks the meat down from a whole cow and ships it to the store when you buy it.
