guys, I made this ice cream. don't ever make it. but if you do...

¾ cup heavy cream
3 tablespoons/15 grams Dutch-processed cocoa powder
1 cup/140 grams chopped chocolate (LESS!!! 75 ish grams is ok; I used 72% cacao)
1 ½ cups whole milk (use a mix of milk and half and half -- I did like 1 cup milk, one half cup half and half)
¾ cup sugar (I used about 2/3 cup and I'm like "is this too sweet?" start at half and add more as it's cooling if you really want
⅛ teaspoon fine sea salt (up this JUST A SKOOSH. JUST A SKOOSH)
6 large egg yolks
¾ cup crème fraîche or sour cream (use creme fraiche. you need the plain-ness of it. sour cream is like bitter-ish here)
1 teaspoon vanilla extract (use less. THIS ICE CREAM IS NOT ABOUT VANILLA!!)
