Dicsovery = identification and sharing of evidence. So (for example), the plaintiffs could seek evidence like Trump org financials, internal emails,

depositions from executives, etc that would show, say, that Trump remains in control of Trump Org, and Trump Org would have to provide it.

Interlocutary = a provisional decision made while the case is being heard and determined. So the court may make an interlocutary order that (spitballing here, I don't really know) there be no contact between Trump and Trump Org executives (including his children?), or maybe that all Trump Org receipts from foreigners be placed into a trust.
