Boost Mobile, Sprint and Starbucks are official sponsors...so all of their locations are either stops or gyms.

Everything else is pretty much from one of Niantic's older games - Ingress.
I know that some of the parks around here have contacted Niantic to have stops removed, because our people are assholes and we can't have nice things.
Not sure how to get your place to become a stop, though.
