Pippy: Cooked quite a few things last night with varying success. I did the rutabaga "mashed potatoes". Like potatoes, it took *forever* to cook -- (edited)

but did work well to turn into a mash. Had a color a bit like sweet potates and a taste a little like squash. I loaded it up with butter and some cheese and ate with grilled chicken and it was acceptable. I'm not sure it is worth the carbs. I have some cauliflower mashed to try next.

I also made low-carb lemon cheesecake bars and they were excellent. I used 24 oz of cream cheese in the end because it seemed much more liquid than the images suggest but it cooked up nice and hardened well.

Also made Kare's chickpea humus burgers for my wife which always turn out great
