American 'cheese' is ground up mild cheddar mixed with 'milk fat solids' so they dehyrdrate the oil from butter and add it to cheese

which is why it melts so well, its the dairy equivalent of a tablespoon of bacon fat

I suppose if you are low carbing then it would make sense, but then you're not adding it to pasta either.
