I make great potato salad even though i don't eat it. Same with deviled eggs. My sister makes runny p-salad with hard-assed potatoes.

There's a trial and error and a give and take to this. Eventually everyone knows who makes the good stuff and who makes the stuff you should avoid. Experience is key.
