instant pot people? I made this (ish) last night for lunches this week. it is *good.* VEGAN WEST AFRICAN PEANUT STEW

I doubled the ginger and red pepper, used 3/4 cup PB rather than 1/2, used 1.75 pounds of sweet potato, kale rather than collard, and used chicken stock vs veg.

I did everything in the IP and immersioned the soup before adding greens (chopped probs smaller than you'd think). it's so good. I think the double ginger is key, so don't skimp.
