As far as I understand it, any travel back in time creates alternate timelines (dimensions/universes in Marvel speak) that are irrevocably separated from the "virgin" timeline.
So, realistically, going back to get the stones creates a new timeline where the stones were taken from NY but they are brought back to the "virgin" timeline where we started.
This is all fine and good but it does mean that you can't "go back" and put them back. You've already created a second timeline at the point you took them AND you create another split when you go back to put them back.
If you don't care about those alternate timelines, sure, we're still good. Your "virgin" timeline is still intact and moving. BUT
They basically shat on the virgin timeline with old cap because he would only exist in a broken off timeline where he went back to put back the stones and decided to stay...
