In BTTF, what you do in the past changes the virgin timeline. This is why Marty fades from existence while trying to get his parents together. His actions can destroy himself because the past is changing his original future timeline. This is NOT the case in the MCU version. The MCU version forks the lines and they are permanently separated.

I guess my bone of contention is that the timeline we were watching when cap when back in time was NOT the timeline we were watching when cap was sitting on the bench.

The way it is framed, it is meant to look like our "virgin" timeline (the one we were "in") ended up with old cap in it but that is not the case. The only timeline where old cap exists is the one where cap appeared back in 1970 (or whatever) and stayed. That was not the timeline that sent him back.
