I've found that it goes best with a penne or rigatoni.

We tried it last week in a pasta bake (with cheddar and monterey jack) but the spiciness of the sauce and the cheese clashed. Usually we just have it with the pasta, but I have made it with regular Italian sausage and for something super spicy have used Sicilian sausage. Topped off of course with some freshly grated parmesan cheese :)
