i found it varied depending on the kind of eggplant.

it's the number of seeds that can alter the taste. i was going to farmers markets regularly, and there were some localish vendors that had some thin chinese kind that didn't require any extra work. if i couldn't find those, results varied; so i ended up prepping just in case.
i remember reading re: male vs. female eggplants, but that didn't seem reliable re: bitterness either. (maybe they needed a yahoo! personals guide. hi mick.)
