I've started doing all my own cheese grating/shredding. It comes out perfectly with my food processer and the cost is about half of what the pre-shredded in the bag costs.
First you use 2 tablespoons butter and 3 tablespoons flour and make a roux. Cook on medium heat stirring constantly for about 3 minutes. Next, you slowly whisk in the evap milk, making sure there aren't any lumps. Then add 1/4 cup finely grated sweet onion, 1 tsp mustard powder, 1/2 tsp garlic powder and stir until it comes to a boil. Then you take one beaten egg in a bowl, cup, whatever, and spoon a bit of the milk sauce into the egg a bit at a time so it doesn't curdle. Once you have the egg all mixed with sauce, you stir that in the saucepot. Add 2/3 of the cheese, stir constantly until it's melted and the sauce starts to thicken. Pour over your precooked mac (about 8 ounces dry) and stir. Cover with the rest of the grated cheese, then sprinkle the toasted panko on top of the cheese. Bake at 375 for 30 - 40 miniutes until browned on top.
This is absolutely delicious.
