I love shaved parm over a simple salad of sliced tomatos and thinly sliced mozzerella--drizzle a bit of evo+balsamic vinegar and whatever herbs you

want. Let it sit in the fridge for about an hour so the flavor of the vinegrette will soak in, then serve with fresh parm. You can't get any more summery than that.
