preshredded stuff has cellulose -

shredding your own is definitely better. I was asking her if the recipe called for fresh milk or carnation evaporated milk in the can. I had read/heard somewhere that something about the way the evaporated stuff is made (tempered?) makes it creamier in the final baked mac/cheese.
