do you have too much zucchini right now (like me)? I made this Zucchini Lemon Bread yesterday and it is DELICIOUS -- (edited)

i did sub-out some of the oil.
I used half cup of olive oil (extra virgin, despite what she says) and half a cup of almond milk.

it's so light, i know it's called "bread', but let's be honest, it's pretty much cake.

I did one loaf and 8 muffins, instead of two loaves (because I only have one loaf pan and i wasn't leaving the oven on for that long to do them one at a time!)
