Can't put too much thought into it, or it falls over.

Half of all gut flora.
Half of all viruses? Prions? Hard to say.
At least it wasn't half of all life by weight, then you'd have people with half of themselves missing for 5 years. Oof, think of all the species wth symbiotic relationships - if a random half disappeared, then 50% of the remainder might also perish due to the broken relationship, meaning that 75% of life would have been affected.
And what about Pando? Did the entire structure just blink out of existence for five years, or only half of it?
I've previously raised concerns about pilots vanishing causing planes to crash; do they reappear in the plane wreckage? Or in midair? Presumably anyone who died in the crash would stay dead. As would anyone who committed suicide during the blip. And anyone who was murdered by Ronin.
The blip is the messiest, craziest thing I've ever seen be touted as a victory in film. And it's great. A cleaner solution would've made the preceding films feel pointless.
