I love pickles but have generally avoided them since trying to eat low (ok...at this point...less) sodium

brine is technically salt + water (although most pickling recipes are vinegar w/ some water so I guess you could in generally call it a brine) -- nm

and the pickling is because of the vinegar (not the salt or water). The vinegar is what causes the fermentation that preserves the veggies -- nm
