You can basically pick a bodega in Harlem and they'll have chopped cheese. It's really nothing special but it's a NYC thing and I get wanting to have one.

For roast beef in Manhattan I say go to Defonte's. For the best you'll have to go to Brooklyn where there are three places I can send you.
