what kind of meats would not be available to the public?

bistro tenders are a shoulder strap, very tender, if you order filet minon and you get two or three coin sized pieces (usually wrapped with bacon) then you got a bistro tender instead, (actually just as good if not better, but sells for much less if you can get it)

hanger steaks

rib fingers (the meat between the ribs, very gristle/fatty, they make great stew/chili, but when not covered in thick sauce look terrible, cooked as is taste like hot dog before its ground up.)
