Once I ran out of episodes, I watched a number of the 60-180 seconds shorts, then the Ready Room post episode talking heads shows hosted by Will Wheaton
Then a handful of the Short Treks that best I could tell were not Discovery related. I was really entertained by the ones I watched:
The Escape Artist which is a Harvey Mudd short starring and directed! by Rainn Wilson
Q&A which is about Spock's first day on the Enterprise and being trapped in a turbolift with #1 (set in the framework of the pilot)
Ephraim and Dot which is animated, directed by Michael Giacchino! and is a very cute episode about a tardigrade tangling with an Enterprise robot.
Having running through those but not willing to start in on Discovery, I watched For the Love of Spock a documentary directed by Adam Nimoy that I cannot recommend enough
