Just noticed my spices are years out of date - help me shop Poll: what are your most common recommended spices/herbs and spiced dishes?

My current list
For desserts: cinnamon, nutmeg, mint
For chili: cumin, garlic powder, cayenne, red pepper
For fish: dill
For Asian stir fry etc: ginger and ?
For Italian: oregano
For Indian dishes, like with chickpeas and rice? guram masala, curry, coriander, turmeric? cardamom?
I cook a lot of chicken typically just broiled but would be happy to dress it up. Same with pork.
Anybody actually regularly use basil, thyme, bay leaves, allspice, rosemary, paprika, mustard powder?

OK. Use of your unused spices. Thyme used for tourtiere. Basil super rare and it would only be fresh. Oregano never. Rosemary for a couple of dishes

I get the convenience but it's night and day difference with fresh dill on your fish, and dried. A few other spices are night and day. Hint hint

thyme is good with most meats, rosemary with roasted, basil important to thai and Italian, coriander also goes with chili and cumin, curry
