thyme is good with most meats, rosemary with roasted, basil important to thai and Italian, coriander also goes with chili and cumin, curry

Asian stir fry ginger garlic chili pepper soy and sesame oil (just a few drops to a spoonful really) or use their 5 spice which is a combo much like 'curry'

I use thyme and rosemary a lot, cumin/coriander.

having gone low carb I use onion powder to thicken sauce/gravy, used to use mushroom powder but that gets us gouty.

mom likes allspice for broths.
