I found a good cheat for them. Purdue has those bags of pre-cooked chicken. The fajita flavor is really good and works with quesadillas. -- nm

We mix everything (shredded chix, rotel and black beans) together on the stove first, which lets us cook off any excess liquid. -- (edited)
