New (for me) recipe: Stuffed Potatoes -- (edited)

I saw Lidia Bastianich make something like this on her show but I simplified it applying techniques I use when making twice baked potatoes.

I microwaved 4 big russet potatoes for about 12 minutes. While they nuked I sauteed 12 oz of chopped cremini mushrooms and 1 large chopped shallot in EVOO. I tossed in crumbled sweet Italian sausage (3 links without the casings), salt, pepper and parsley. Sauteed everything on medium high heat for 8 minutes or so.

I let the potatoes cool for a bit, cut them lengthwise then scooped out most of the potato leaving myself with four hollow shells/boats.

I put the scooped potato into a bowl and sprinkled some EVOO, more parsley, salt, pepper and stirred. Then I tossed in my sausage stuffing ingredients and some grated parmesan. I stuffed the 4 shells with the mixture. Then I put them in the oven on 425 degrees for about 12 minutes. I later sprinkled some shredded mozzarella over the potato boats and a little more grated parm for texture. A bit more parsley for color. Baked for 5 more minutes.

Served them with a lovely tossed green salad in creamy garlic dressing and a chilled white wine. Really good. They would also make a lovely contorno or side dish at Thanksgiving. One potato can equal 2 (or 3) servings in this case.
