I disagree that butter isn’t eaten with baguette in France. It’s very common to have a baguette for breakfast with butter and jam.

The most common Parisian sandwich is a jambon beurre - literal translation “ham butter”

If you’re having it as a side for dinner, maybe that’s where the “no butter” thing comes from but it’s probably because you’re in France eating food that’s already loaded up with butter.

If you have good butter then go ahead and butter up that baguette if you want.
