Hee! I was just going to link you to "chili talk" on B2.

I'll tell you another little secret. I've found that the perfect spice mix is in "Col. Carroll Shelby's" chili mix. It comes in a little brown paper bag and it has this awesome mix of chili powder, cumin, onion powder, garlic powder, powdered cilantro, etc. There's also a package of masa flour for thickening, salt, and a packet of cayenne pepper that is optional, depending on desired hotness. If you use it all, it's HOT. I use about half of it. If you can find this kit in the store, use it with my basic chili recipe, ignoring the instructions on the back of the package. I've won a couple of chili cook-offs this way. :)
