Fry 1 chopped onion and as much chopped garlic as you're comfortable with in olive oil. Add chopped bacon (or if you have it, pancetta) and brown. Add a pound of ground beef and brown. Add a couple of TBs of flour and stir so it coats the meat. Add 1/2 cup of white whine and stir until absorbed. Add 4 fresh, chopped tomatoes or 1 16 oz can of crushed tomatoes with 2 TB tomato paste, thyme, bay, salt and 2 cups chicken stock (or chicken bouillon in water). Simmer for about one hour, until thick.
