More cooking stuff: Country-style pork ribs were on sale. I ordered some but ended up getting long blades of 'country style' pork delivered instead. -- (edited)

*shrug* That's grocery delivery in the time of COVID I guess. But we make do...

So I cut the pork into 1 inch chunks against the grain and sprinkled on some kosher salt and fresh ground pepper. I chopped a sweet onion and did a rough cut of some cremini mushrooms. I took a can of cream of mushroom soup and mixed it in a bowl with a packet of turkey gravy mix (because I didn't have mushroom or pork gravy mix). I broke out the crock pot I got from David and Judge Bane and layered the pork, the onion, the shrooms and the soup mix. Turned the pot on low and let it cook overnight. Woke up to a wealth of ridiculously savory scents in the house. Tasted it. The pork is fork tender and the sauce is a straight up umami bomb. Its. So. Good. I plan to sprinkle some chive over it and serve it on a bed of spinach. mel will have it with potatoes. Lunch Will Rule.
