it mostly keeps stuff you only need for a specific purpose out of the way of general stuff. Or if you are in a time crunch for some reason everything -- (edited)

you need for THAT is easy to get at once.
you can also do things like 'all your underwear', so you can find it quickly, or "andrea's tshirts' vs "dave's tshirts'.
depends on the trip.
