I'm surprised more bubble guys haven't opted out.

You can't really do anything to impress teams and earn your spot. If you are some UDFA or someone coming off a bad season or an injury you aren't fully healed from, why not opt out. That way you make a decent payday this year and would presumably still be listed as on the roster next year with a (hopefully) better chance of making the team.
