mmm cheese ... I lived for a short while in Wisconsin ... they have this interesting thing called Potato Lefse - think of a sort of soft shell taco

wrapper - but made out of potato instead. They toast it for breakfast with butter and cinnamon sugar - but my mom - not realizing the finnish or whatever way to serve it like that - used to melt cheese on it - like a quesadilla - and it was soooo yummy - but the locals were appalled at the thought of it being made into an appetizer. Lefse is soooo good .. but I've never found it anywhere else.
