meat with just a dry spice rub, a thick sweet bbq sauce (Memphis style), a mustardy sauce (NC and SC style) or a peppery vinegary style sauce (old fashioned style). You never serve the meat swimming in sauce, the sauce is on the side because the rockstar of this sandwich/dinner is the glorious delicious slow cooked smoked pork that just melts in your mouth.
