I went through a huge asian cuisine phase a bunch of years ago and spent lots of time searching for new recipes -- (edited)

and ways of doing things

Also, if you do use baking soda make sure to do the step of rinsing (I always use water). Otherwise the baking soda will make the dish bitter - cornstarch won't do that
