That would be interesting. A Korean Reuben that swaps out sauerkraut for kimchi. The relative flavorfulness of pastrami vs roast beef and

rye vs ciabatta as well as Russian Dressing would be interesting.

I'd never eat it.

I will forever remember being sternly told at a deli that there was no such thing as Reuben without the dressing, I was ordering a pastrami sandwich with Swiss and sauerkraut.

But I'd definitely try a pastrami sandwich on rye with Swiss and kimchi.
