Do a "stuffed baked potato soup". Start with 3 cups of vegetable or chicken stock (I'm really liking the ready-made by Wolfgang Puck that comes in the recloseable cartons). Bring to a boil and add 4 cups of Ore-ida southern style hash browns (cubes, not shreds). Bring back to a boil, turn the heat down, cover and simmer for 20 minutes. Then add 1/4 cup of REAL bacon bits (the Hormel's in the pouch is good, unless you just feel like frying up some bacon and crumbling it), 1 tablespoon of chives, and an 8 ounce container of sour cream. Reheat just to a simmer, do not boil. Salt and pepper to taste, serve piping hot with shredded sharp cheddar cheese on top.
