Depends on how it was done for me. Freeze-dried has a more rounded taste and the just however it's dried seems kind of flat and bitter. I always have fresh on hand.

It has it’s place, but they’re mostly different for me. In a pinch I’ll substitute powder/dried but they don’t have the same flavour/texture.

I use dry minced garlic all the time and while it’s not as good a taste as the fresh stuff, it suffices. -- nm
