Well, the story about the actual St Valentine is...weird... my theory on why they made a holiday for lovers in the middle of feb...

Its the coldest part of the year in europe then, most folks lived crowded into hovels, yurts, row houses...even nobility didn't have it that well off comfort wise, castles were drafty, cold stone caverns, they didn't have windows, just shutters to block most of the freezing air. so in feb you've spent the last six weeks huddled shivering in a straw bed eating a bowl of gruel (its actually a thing) or curds n whey.
so like a therapist they asked couples to think about something to appreciate the partner just around the time you're thinking of ways to kill without getting caught...
there was an unfortunate gap in celebrities or gods to honor so they grasped a straw when reading about valentine.
