pound of dry black beans
six slices bacon
six cups stock (I use no sodium chicken usually)
some chilis in adobo (you know how much you like)
some chili powder
1.5x as much cumin as chili powder
yellow onion slightly bigger than you think
some garlic (I use the jar kind and use about a heaping teaspoon, but again you know how much you like)
instant pot fry bacon (cut into small pieces) halfway. take out some grease if a lot. add onion (small dice). cook some (translucent ish). add garlic. cook a little ONLY. add spices. cook a little ONLY. deglaze pot with stock. beans, chilis in adobo, stock in pot. 35 minutes pressure, 10 minutes release. use immersion blender or masher to mash. you may need more stock depending on your beans and how soupy you like).
can also add finely diced carrot and celery with onion. I find carrot delish but never have them. I find that if carrots, more chilis.
to make sure you don't get chili chunks, can puree in nutribullet with some stock rather than just rough chop and toss in.
also: there's supposed to be a bay leaf and oregano but I hate oregano and always forget bay leaf. maybe you won't.
